1. Empty ice cream mix packet in a bowl. Add water 700ml. and mix well till all lumps disappear .
2. Cook custard till it comes to a boil. Boil further for 2 minutes.
3. Cool it and set it in freezer till it becomes hard.
4. Break into small pieces and add 200 mls. ( 1 cup ) fresh cream and beat it very well till the mixture becomes 4 times in its volume.
5. Towards the end add Flavors, Squashes, and Nuts, of your choice and prepare different ice creams of your choice.

1. Tutti Frutti :

Add 150 gms. Tutti frutti, 1/2 tsp. Orange color, 1 tsp Mix fruit essence to ice cream .Add to ice cream Fresh cream as specified.

2. Mango / Custard apple / Chickoo ice cream :

Add fresh fruit pulp 300 ml, few drops of color and fresh cream as specified.

3. Orange ice cream :

Add orange tang 8 tbsp, orange color few drops, orange essence ½ tsp, fresh cream as specified, sugar to taste if required.

4. Pineapple & Figs ice cream with Pineapple sauce :

Add pineapple pieces 100 gms, figs 100 gms., ½ tsp. Vanilla Essence and yellow color few drops, pineapple essence ¼ tsp, fresh cream as specified.

Sauce : Take 200 mls. Pineapple stock add 1 tbsp. of corn flour and bring to a boil. Add 1 tsp butter and cool in refrigerator. Add when serving the ice cream.

6. Strawberry / Raspberry / Blueberry ice cream :

Add strawberry crush 150 ml, strawberry color few drops, strawberry essence ¼ tsp, fresh cream as specified.

7. Chocolate chips :

Add to the ice cream 11/2 tsp. Vanilla essence and 150 gms. Chocolate chips and fresh cream as specified and freeze well.

8. Choco Mint :

Add to the ice cream 1/2 tsp. mint essence, few drops color and 150 gms. Chocolate chips and fresh cream as specified and freeze well.

9. Kesar Pista :

Add to the ice cream, few strands of saffron crushed in 10 mls. Milk, few drop saffron color and 75 gms. pista and fresh cream as specified and freeze well.

10. Butter Scotch :

Add to the ice cream, 1 tsp. Butterscotch essence few drops yellow color and 100 gms. Butter scotch or crushed praline and fresh cream as specified and freeze well.

11. Royal Rose ice cream :

Add to the ice cream, ½ tsp. of rose essence few drops rose pink color and 75 gms. Almonds and cashew and fresh cream as specified and freeze well. Serve with Rose syrup.

12. Strawberry / Raspberry / Blue berry Ripples:

Add to the ice cream, 1 tsp. of vanilla essence few drops color and 100 mls. Of crush and mix very little to create ripple effect.

13. Kasata ice cream :

Take the beaten ice cream and divide into 3 parts and make Strawberry, Pineapple and Choc chips ice cream.

Assembling the ice cream : Take an 8” X 2 ½ ” tin . Place ½ “ layer of vanilla sponge at the bottom of the tin. Pour the three ice creams in layers and freeze. Cut the ice cream like cake. And sprinkle chopped cashew nuts on the top.

14. Chocolate ice cream:

Add to the ice cream 40 gms. of cocoa powder while boiling and add 20 gms. Butter when the custard is slightly hot. Add 1 tsp. of vanilla essence . Make ice cream as mentioned and fresh cream as specified.

15. Coffee Desire:

Add to the ice cream, 1 1/2 tbsp. of instant coffee to 1 tbsp. of milk and mix well .

Add Nuts and raisins and freeze the mixture well.

16. Raisin Honey :

Add to the ice cream, 4 tbsp. of honey . Add 200 gms. raisins and freeze the mixture well.

Variety Sauces :

1 . Chocolate Sauce :

Add to 200 mls. Milk 2 tbsp. of cocoa powder, 1 tbsp. corn flour and 50 gms. sugar. Bring to boil. Add 1 tbsp. butter while cooling.

2. Melba Peach Sauce :

Add to 150 mls. Peach stock, 1 tbsp. corn flour. Bring to boil. Add 1 tbsp. butter while cooling.

3. Orange Sauce :

Add to 150 mls. Orange squash, 2 tbsp. water and1 tbsp. corn flour. Bring to boil. Add 1 tbsp. butter while cooling.

Ice cream Sundae :

1. Banana Split :

In a oval or rectangular tray place bananas peeled and cut length wise. Place 1 scoop each of Vanilla icecream,Chocolate ice cream and Strawberry ice cream. On the strawberry ice cream pour melba peach sauce. On vanilla ice cream put pineapple pieces and on chocolate ice cream pour chocolate sauce. Serve immediately.

2. Chocolate Sundae :

In a beer mug put 3 scoops of vanilla ice cream pour 100 mls. chocolate sauce and 50 gms. Of roasted cashewnuts. Serve immediately.

3. Melba Peach Sundae :

In a rectangular tray place tinned peaches at the bottom. Put 3 scoops of vanilla ice cream pour melba peach sauce. Serve with wafer biscuits.
